Beef Sustainability: Realities, Challenges, and Systematic Tradeoffs

Speaker:  Sarah Klopatek, Chief Livestock Scientist, JBS

Among the academic communities it is relatively well known that beef has higher carbon and water footprints than other food sources. However, what is not common knowledge is that beef system carbon intensities can range 50-fold, and that there are significant systematic trade-offs to consider throughout. For example, how do the implications for grass-fed vs grain-fed vary around the world? In this talk, Klopatek will discuss how and where beef emissions across the globe can be reduced, how these reductions will be accounted for, and how as a society can we avoid negative trade-offs by considering a systems perspective.
